A Tuscan dairy visit

In the picturesque town, Greve in Chianti, just outside of Florence is an amazing small batch goat dairy.  They opened their barns and doors to us for a little tour and tasting.  While they are able to make and sell raw fresh cheeses (and we in the states cannot), Michaela generously gave me some tips on how to reproduce a similar taste and feel with pasteurized milk.  She believes that goats are the animal of the future and we couldn't agree more! They exclusively breed and milk Alpine di Chamois goats.  Currently they are milking 91 goats and have about the same number of kids from this season's offspring.  The dairy has been in existence since 2001 and is run by 4 partners.  They make cheese with each day's milk and change the offerings by the season.  Along with a cheese tasting, they also offer lunch by arrangement made exclusively from what they grow and raise on the farm.  Homemade and Local one hundred percent. What an inspiration!
